Carolina Gatti has spent her life devoted to wine. At just 3 years old, she took part in her first grape harvest and at 14 she enrolled in the oenology school in Conegliano, becoming first a wine technician and then an oenologist. In Ponte di Piave, on soil rich in limestone and clay, Carolina runs her farm with passion, freedom, and determination, cultivating five hectares according to the ancient ‘Bellussera’ method, invented by the Bellussi brothers in 1800 and now extinct, so much so that Gatti can be considered the only one left to use it. The vines grown are Glera and Raboso, the latter particularly dear to Carolina, so much so that she focused her entire thesis on it. It is an archaic, wild, fierce grape, so much so that Marco Polo chose it, precisely because of its peculiarities, as the only one capable of withstanding the journey to China. Vinification in cement, spontaneous fermentation, repeated racking and resting in demijohns, according to the traditional procedures learned from her grandparents, are the methods followed by Carolina Gatti, one of the most unique, imaginative, and rebellious figures of our time.
