AdOcchiChiusi is a still white wine made from Souvignier Gris grapes, a fungus-resistant variety that is part of the agricultural practices applied every day at Terraprava: use of essential oils, decoctions and herbal teas made from nettle and horsetail, biodynamic preparations, green manure and limited use of machinery, but total ban on synthetic chemicals.
Souvignier Gris is a cross obtained by the National Wine Institute of Friborg in 1983 and was only registered in the Italian national register in 2014.
Recommended food and wine pairings: aperitifs, cheeses, fish and shellfish, Asian cuisine, risottos in general.
