Nomen omen, born from the freshest grapes harvested in the company’s vineyards at the foot of the hills. Co-fermentation of Sangiovese and other grapes in search of acidity and freshness, with whole cluster macerations and ageing in cement. From vines planted on soils of clay, rhyolite, and sand, 60% of the grapes are vinified with varying percentages of whole clusters (from 30% to 50%) using the “cake” technique, which involves layers of whole, unpressed clusters alternating with layers of destemmed and crushed grapes. 20% of the mass is vinified with carbonic maceration, and the remaining 20% is processed classically with destemmed grapes but leaving the berries whole. Two months in cement before bottling. A red wine characterised by its freshness and vibrancy.
