The wine that best represents the production philosophy of I Forestieri is a selection of the best plots with very low yields and long macerations. From 50-year-old vines planted on schist, rhyolite, marl, and gypsum, between 300 and 600 metres above sea level. Fermentation of the grapes in terracotta and ceramic amphorae with about 20% whole clusters. Daily manual punch-downs, maceration on the skins for about 5 months. A long journey in search of finesse and elegance. About 4 months in cement before bottling and a further 12 months in the bottle before being released for sale.
