A Primitivo that isn’t jammy, but dry and straightforward: harvested before overripening, the grapes arrive at the winery before the heat pushes them toward excessive sugar and concentration. No artificial roundness, no forced elements. Here, too, the unpruned vineyards of Sogliano Cavour are free to take whatever form they choose, and the winemaking follows the same non-interventionist philosophy as the estate’s other wines—with very low sulfur dioxide levels, because the fruit’s freshness needs no artificial support.
