An untamed Negroamaro, as prickly as the animal from which it takes its name: just as the hedgehog defends itself with its quills, the winemaker does not blunt the vine’s thorns. Hand-harvested from the untamed vineyards of Sogliano Cavour in the last week of August, it ferments spontaneously using only the grapes’ indigenous yeasts, macerates on the skins for twenty days, and is bottled without fining or filtration. The philosophy remains the same—non-interventionist: the wine remains what the vineyard has determined, without any subsequent adjustments.
